Recommendable local dishes: kale stew (you should not ask for it but for 'Boerenkool met worst' because almost no one knows that the stuff is called kale in English) zuurvlees (marinated pork or horse meat with sweet-sour sauce) wortelenstamp (mashed potato/carrot stew eaten with bacon and smoked saucage) and pea soup.

How are the Dutch standard of living? Economy, health, house prices, etc

I think it's about 150% of the Spanish living standard. People have nice houses and luxury goods there as well but we have a bit higher income per capita

On the other hand, Holland is quite expensive, it's way more expensive to buy groceries, gasoline, pay the rent etc. compared to Spain, you gotta keep in mind Spain is a very spacious country whereas Holland is crowded like an anthill...

Price of gasoline: between 0,80 or 0,90 €/liter

How much is this in Amsterdam?

About the same I guess, but you shouldn't look at the costs in Madrid but on average throughout the country. In a rural area of Spain you pay 200.000 for a big house, in a rural area of Holland it would be about the double of that price...
